40° food

Sheeesh, finally! It is close to 40 degrees in Germany. Thinking back beginning of last week it was 11 degrees with plenty of rain. So here we are sunshine, hot air, flipflops and open windows at night. You just have to adjust to the sudden heat and …enjoy! People always have something to grouch about ... too cold, too wet, too hot, too… you name it. Guys it is beautiful and summer has finally arrived.

What really helps for a fresh start into the hot breeze are fresh made juices. We have started to make fresh juices every morning and we’ll share our most beloved recipes soon.  

Really great when it is hot is a light supper! We have just had a fresh salad with homemade veggie pancakes. Something we came up with, because we had tasty vegetables and salad in the fridge but no clue what to do with it. So here is our fast and yummy recommendation.

You need approx. 30 minutes and it is fairly easy to prepare and cook. The batter lasts for about 8 servings (if it is too much just halve the amount of the ingredients or you can even enjoy them cold with some tasty sour cream, etc.).

Batter:

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon pepper

1 egg

1/4 cup milk

Vegetables:

In total we had 2 cups of grated mixed veggies (zucchini, carrots, leek, peppers, onions, chili for some spice, some fresh, sliced green onions, chopped basil and chopped rosemary).

You can pick any seasonal veggie available and experiment a little bit.

Directions:

In a mixing bowl, stir together the flour, baking powder, salt, and pepper. Add the egg and milk and stir until combined.

Heat 1 tablespoon of oil over medium heat in a frying pan and cook the veggies until they are firm to bite (or how you like to have them - maybe a little more than al dente?).

Add the batter into the pan and cook about 2 minutes on each side until they are coloured golden brown. Keep cooking the pancakes successively as described above and add the remaining oil to the pan as needed.

Additionally we had prepared a mixed green salad with fresh tomatoes and sliced green onions, some fresh basil, goat cheese and a vinaigrette. Et voilà - Bon appétit.
